Summer Minestrone alla Genovese

The fridge was empty, the cupboard barer than Mother Hubbard's, and we had friends spontaneously inviting themselves to dinner. I flicked though the book for some inspiration and this is what I decided on. I had some homemade pesto and some orzo, so ran out for some veg & a baguette. I used up the last of my precious & coverted Marigold bouillon powder and put together this delicious soup. Very quick to make, and very comforting on a rainy October night. There's lots left over to be frozen in individual portions for this winter.

Wow, you have been busy lately! That soup looks delicious, as does the cheesecake ice-cream. Making me hungry!
