Cheesecake Ice Cream

I ♥ cheesecake, I ♥ ice cream, and this recipe has my name on it! Planning ahead I picked up some digestives on my last trip to Ikea in anticipation of this recipe. I added 50g of biscuits crumbled into the churned ice cream, although next time I won’t bother as they go slightly soggy. I made a quince tarte tatin (from Donna Hay's 'Off The Shelf') to go with this creamy concoction ~ a marriage made in heaven!
