Summer Crumble

I'm making the most of the last apricots available to make this crumble. They were a bit soft & fluffy so cooking them was the only option. I've always loved crumbles, probably as they are one of the most quintessential English puddings. I really liked the added ground almonds in the crumble, and will adapt my other crumble recipes in the future. Apple season is around the corner.....
