Prawn & Black Rice Salad, with Vietnamese Dressing

I searched high & low for Nanking black rice, and was about to order from Merchant Gourmet when I spotted Forbidden Rice at one of my bizarre ingredient stores. It has the most wonderful nutty flavour, with a slight indigo tinge... really stunning against the pink prawns. The dressing is sensational, even though my rather sensitive tastebuds took a beating with those little birdseye chillies. 10/10 and adopted firmly as a favourite.
