Happiness Soup

I'm a little worried about finding some ingredients for my project as autumn creeps up on us, so while yellow courgettes are still around I'm making the most of it. This fluorescent soup is summer personified, it's fresh & flavourful. I can imagine eating this mid-January in the middle of a snowstorm and pretend I'm eating on our sunny terrasse. I'll make up another batch this week & freeze it. It went very well with the garlic nan.
