Za'atar Chicken

I hunted high & low for Za'atar in all the middle eastern grocery stores in my neighbourhood to no avail. A very kind Lebanese collegue found a huge pot for me, along with the elusive pomegranate molasses that I've stashed away in the fridge for a later date. I shall make the suggested fattoush another time, I was a bit behind and favoured a quick couscous, flavoured with apricots, raisins and coriander. The chicken was succulent and moist, with crispy za'atared skin. I have been instructed to make this again...
