Caramelised Pineapple with Hot Chocolate & Malibu Sauce

This pudding followed the pilaf, and I could smell the roasting pineapple as we were eating the main course...so I left lots of room in anticipation. As Rachael Ray would say: YUM-O! It was fabulous, decadent even, and I still have half a jug of the sauce left over.... uh oh, I might 'sleepwalk' and wake up with a chocolate moustache!
